PIC did not have knowledge of requirement to have sanitizer test strips (no strips were found in facility), was unable to locate a food thermometer or answer raw meat procedural cooking questions. PIC could not accurately answer questions about date marking of TCS foods. CA: PIC and all food service employees needs to be re-trained by serve safe manager. Repeat Violation.|
