Dining: Rome duo taking Jefferson’s to Calhoun by August. Chicken Salad Chick opening for carry out at Redmond Regional.

It was only a matter of time — and a good business decision, too.

The Jefferson’s chain has quickly spread across Northwest Georgia since opening in downtown Rome more than 15 years ago. Since then, restaurants have been opened in Cartersville, Cedartown, Rockmart and Summerville. Missing from the list? Calhoun.

Until now. Almost five years go, Wayne Mullinax and Bart Kinne brought the franchise at 340 Broad St. and now they’re expanding to the Calhoun location at 447 Ga. 53.

Kinne days the restaurant will be in the shopping center with Food Depot and Tractor Supply behind Taco Bell and Chick-fil-A. The goal is an early August opening, he says, adding that getting some of the equipment has been tough (walk-in freezers, coolers). “It will all come together and work out for us,” he adds.

And it looks like they’re heading into a warm reception. The Facebook page, created on June 8, already has 700 likes.

Chicken Salad Chick at Redmond Regional: The initial health inspection is in (100 out of 100) and Chicken Salad Chick is on the way to opening an in-hospital spot at Redmond Regoinal Medical Center.

Redmond’s Andrea Pitts says things are still coming together but the idea is to offer carry out service to the public as well as hospital guests. Redmond has been home to several other franchises over the years but this is a bit different as Chicken Salad Chick has mostly been a stand-alone concept (see Rome and Cartersville stores).
