Corrective Action: CFSM was notified. Drink was discarded. Employees were educated on proper use and storage of drinks in kitchen area. Corrected On-Site. New Violation.
|4-2A||Violation of Code: [511-6-1.04(4)(c)1(iv)] Observed several food items stored in uncovered containers throughout kitchen area and within walk-in cooler. Containers of egg rolls and sweet and sour chicken uncovered in walk-in cooler. Several uncovered containers of soup chips and dried noodles stored throughout main kitchen.
Corrective Action: CFSM was notified. All food items were properly covered with lids or plastic. Corrected On-Site. New Violation.
|6-1A||Violation of Code: [511-6-1.04(6)(f)] Observed improper cold holding of potentially hazardous, TCS foods above 41 degrees during inspection. Walk-in cooler and cookline prep cooler in main kitchen not functioning properly with no record of internal food temperatures maintained. Cooked Egg Rolls- 44 degrees, Sweet and Sour Chicken- 44 degrees, Fried Shrimp- 44 degrees, and Chopped Peppers- 43 degrees in walk-in cooler. Raw Shell Eggs- 50 degrees, Raw Chicken- 45 degrees, and Raw Beef- 45 degrees on prep cooler top. Sweet and Sour Chicken- 46 degrees, Pork- 47 degrees, and Noodles- 44 degrees in reach-in.
Corrective Action: CFSM was notified. All out of temperature food items were either discarded or relocated to freezer for proper cooling to 41 degrees based on times prepared. Employees were instructed not to use walk-in cooler or reach-in cooler for TCS food storage until these units have been properly serviced by a licensed professional and have been verified by Health Dept. to be operating at 41 degrees or below. Time Control procedure for TCS foods on Prep Top cooler were established for facility to use until this unit has been properly repaired. This must be corrected by 10/9/19 Corrected On-Site. Repeat Violation.
|14A||Violation of Code: [511-6-1.04(4)(k)] Observed scoops without handles stored with rice in hot hold units.
Corrective Action: CFSM was notified. All unapproved scoops were discarded and replaced with scoops that have handles pointing up. Corrected On-Site. New Violation.
